Liver fry


This is husband recipe he adapted from m-law. When she was with us i never cared to know how she made this because i never ate it. Husband and kids used to eat it. The greens which she used in this recipe is alien to me. I heard that it is used in Arabic cuisine and m-law uses it only in liver fry, reason not known to me. This liver fry has been cooked by husband and first time i tasted it. The taste was too good and kids too liked it a lot. I used chicken liver but back home m-law uses mutton liver. Here goes the recipe:-

Ingredients:-

Chicken Liver 1 pound
Dill leaves or sogi kura few strands
Onions 1 chopped
Cinnamon 1inch pc
Green chillies 2 chopped
Ginger garlic paste 1 tsp
Turmeric powder a pinch
Coriander powder 1 tsp
Red chilly powder 1 tsp
Salt to taste
Oil 3 tbsp



Method:-

Marinate Liver with ginger garlic paste,turmeric powder and salt. Keep it for half an hour.

Heat oil, when hot add cinnamon stick.Then add  onions and green chillies. Once they are fried add dill leaves.

Saute for 2-3 minutes. Add red chilly powder,coriander powder and turmeric powder.

Again saute for 2 minutes. Add chicken liver. Mix well and cover the pan. Let the liver cooks in its own water.

It make take about 10 minutes for liver to cook. Once all the water is evaporated and liver changes its colour to dark brown it means its almost done.

Fry for another 2 minutes so the liver cooks 100 %.

Serve as a side dish or as a starter as in my house. It was done before i served lunch.

Apple Cinnamon Milk Shake

 An apple a day keeps a doctor away. I hate apple. When i was pregnant every other person used to tell me to eat but i hardly ate them. My kids like to eat only when i slice them and they prefer with skin. The other day i have many apples as i got few them from the temple. I made this shake. They loved it so do i....

Ingredients:-

Apples 2 sliced and seeds removed
Milk 1 packet
Cinnamon powder 1/2 tsp
Sugar 5-6 tbsp

Method:-

Take apple slices,cinnamon powder, sugar and little milk in a mixer. Crush apple into fine paste. Add the rest of the milk. Let it cool in the fridge for half an hour. Serve cool...

Egg Roast

For entire week i eat only phulkas for lunch and no rice. Only on Saturday and Sunday i eat rice. And Saturday its always rasam, rice and papad/eggs. I am not that big fan of eggs but eggs always comes as handy when you dont have any veggies or non-veg at home. I have few egg recipes on my blog and this fry goes very well with rice as a side dish. Here is the recipe:-


Ingredients:-

Eggs boiled 4
Onions 2 sliced
Green chilies 3 silted
Ginger small pc sliced
Garlic 2 sliced
Tomato chopped 1
Rai 1 tsp
Curry leaves few
Turmeric powder a pinch
Salt to taste
Red chilly powder 1 tsp
Coriender powder 1tsp
Garam masala powder 1 tsp
Sauf powder half tsp
Oil 3 tbsp



Method:-

Make small slits on the eggs.

Take oil in a pan. When hot add rai and curry leaves. Add ginger and garlic slices.

Then add chopped onions and sprinkle salt. Saute until onions are light brown colour.

Then add green chillies and turmeric powder. Saute for a while.

Add coriander powder,red chilly powder,sauf powder and garam masala powder.

Then add tomatoes.Fry for 3-4 minutes.

Then add eggs and mix well.

I served the egg roast with rice and hot rasam....

Orange Kiss-me cake




I almost bake every week. In school kids see other kids eating cookies and cakes which are store brought. i don't like store brought cake or cookies. So i end up baking a simple cake for the full week which i send to their school for snack time. I give them good lunch and the cake goes as snack.

Recently when i went to Sears outlet here i chanced upon Best of Pillsbury Bake-Off book. And i just loved the contents in this recipe book. Surely not going to do most of the recipes. But the pics tempted me to buy this book which was on sale. Brought this book last week and ended up doing this recipe.

The main thing in this recipe attracted is the notes on the recipe. It reads like this *Recipe by Lily Wuebel, Redwood City,CA. Bake-Off Contest, New york City, 1950*. So the year attracted me to go through the recipe. It's simple and little different recipe...We all enjoyed the cake and hope you to will enjoy making and eating it. Here goes the recipe :-

Ingredients:-

Orange 2
Raisins 1/2 cup
Walnuts 1/3 cup
All purpose flour 2 cups
Sugar 1 cup
Baking soda 1 tsp
Salt 1 tsp
Milk 1 Cup
Butter 1/2 cup
Eggs 2

Topping
1/3 cup Orange
Sugar 1/3 cup
Cinnamon 1 tsp
Walnuts chopped 1/4 cup

Method:-

Heat over to 350 degrees F. Grease pan with butter and lightly with flour.

Squeeze orange from one orange and another orange peel. Remove seeds if any and grind orange with raisins and walnuts.

In a large bowl beat eggs until fluffy. Add butter and other cake ingredients. Beat all with electric mixer on low speed util moistened. Then beat on medium speed for 3 minutes. Stir in orange raisin mixture. Pour batter into pan.

Bake for 35-45 minutes or until toothpick inserted in center comes out clean.

Drizzle one orange juice over the warm cake.

In small bowl mix sugar  and cinnamon. Stir in 1/4 cup walnuts. Sprinkle over the cake. Cool completely about 1 hour.

Chef Harpal Chicken Curry


Since last few day i am getting Food TV. I became a big fan of that channel. I prefer watching cooking channel then watching those boring serials. Best part of that channel is the episode keeps repeating. The recipe i am posting is done by husband by watching chef harpal mom's chicken recipe.
Here goes the recipe...

Ingredients:-

Chicken 1 lb
Onions sliced 1
Tomatoes 2
Green chillies 3
Ginger and garlic paste 2 tbsp
Red chilly powder 1 tsp
Oil 3 tbsp
Salt to taste
Coriander leaves chopped.

Garam Masala powder

Cinnamon 2inch
Clove 2
Pepper 5-6 corns
Cumin 1 tsp
Coriander 1 tbsp

Grind into a coarse powder

Method:-

Take pan heat oil. Add onions and saute till light brown colour. Add ginger garlic paste.

Saute for a while. Add tomatoes.

Cook until nice tomatoes get changed into puree.

Add red chilly powder.

Then add chicken. Add masala powder.

Mix well add salt.

Cover and cook until oil ozes from the sides.

Add 1 cup water.

Cook until gravy thickens and add coriander leaves.

Serve hot.

I have not neglected you...I am really pressed with the time and not getting time to blog. I have quite a few food pictures i need to blog and also i am late in writing that my recipe has been published in a e-book at Indus ladies. I am thankful to Indus to include my recipe for Kids Lunch box recipes and this is the second time they included me in the ebook.Do check the yummy lunch box recipes shared by passionate moms and food bloggers. Kids Lunch box recipes

Now coming to today's recipe is American Chop suey. This i ate first when my sister brought home a take away.I love this dish as your noodles are crispy with the sauce on the top. Has to eat hot.This i made for sunday's lunch. Yes sometimes instead of making biryani i order biryani for husband and elder daughter. And American chop suey for myself and younger girl.Here is the recipe :-

 What you need:-

Noodles
Oil 4 tbsp

For Sauce

Soya sauce 2 tbsp
Vinegar 1 tsp
Chilli Sauce 1 tbsp
Tomato Sauce 5 tbsp
Corn flour 2 tbsp
Pepper powder 1tsp

Take a pan. Mix soya sauce,vinegar,Chill sauce,tomato sauce and corn flour. Keep it on slow flame boil until the sauce thickens an add 1 tsp pepper powder.

For Noodles

Boil noodles and drain water. Spread them on a wide plate and let it cool down for 5 minutes. In a big tawa add oil and saute noodles until crispy.

Veggies

Take which ever veggies you prefer. I took Cauliflower,broccoli,beans,carrot and capsicum.

Heat 3 tbsp of oil and add chopped onions. Saute for a while. Add all the veggies and saute on a high heat. Sprinkle ajinamoto a pinch. Saute for a while and sprinkle salt.

Add these veggies in the sauce.

When serving. Pour the above sauce on the fried noodles and serve it individually.

Mini Pizza



I have been thinking to upload on my blog what i give for my kid's lunch boxes. Not getting much time on the net, what ever time i get i am spending it on crochet. It will be winter in another month and want to do more stuff for kids. Seriously i need a break. Now coming to mini pizza not much frills in it, just a simple and quick pizza with brown bread for lunch box.

Ingredients:-

Brown bread
Tomato sauce
Mozerella cheese
Chopped onions
Chopped tomato
Chopped capsicum

 Method:-

Cut the sides of the bread, if possible cut the bread into round circle.

Spread tomato sauce. Spread onions,tomatos and capsicum.

Grate mozerella cheese on each slice.

Preheat oven and bake until the cheese starts melting.

Voila eazy pizza is ready.

Isn't it super easy.

Mac n Cheese Pie

This is a new recipe i tried for the first time. i always make mac n cheese for the kids as evening snack. But this time i baked and i sent this for kids lunch box. They just loved it so i am.


Ingredients:

Macaroni 1 cup

Boil macaroni as per instruction on the packet. I boiled until i have soft macaroni's and strained the water. Keep aside.

White sauce

Plain flour 3 tbsp
Butter 3 tbsp
Garlic 3 chopped
White Cheddar cheese grated 1/4 cup
Oregano 1 tbsp
Milk 1 cup

Heat butter.

When butter bubbles up add garlic. Saute garlic until garlic leaves nice aroma. Add oregano and cheese.

Saute until cheese melts. Add plain flour. Again saute for 3-4 minutes and add milk.

Keep on whisking so that lumps are not formed.

Once the sauce thickens not so thick. Add the boiled macaroni. Mix well.

Take a pie plate. Spread butter.

Spread macaroni in the pie plate.

Sprinkle 3 tbsp of  White cheddar cheese and sprinkle 3 tbsp of Parmesan cheese.

Bake in the oven until the top turns into brown in colour. I baked it for 10-15 minutes on 175 degrees Celsius.

Serve hot or can be packed it for lunch.

Puffed Apple Pancakes

Kids love pancakes. They all always pester me to make one. It's always banana or apple cake, my girls love to them with maple syrup. This recipe i picked it from a kids magazine. This is little difference then the regular pan cake. Baked for 10-15 minutes until the flour is cooked. Here is the recipe.
2 Apples
1 tbsp oil
2 tbsp butter
Pinch Cinnamon
2 Eggs
2 tbsp Honey
3/4 cup plain flour
1/2 cup milk
Maple syrup


  • Pre-heat oven to 450 F
  • Core and slice the apples. In a think pan, heat the oil and butter. When butter starts to foam saute apples for two minutes
  • Add honey and cinnamon. Cook until apple start to turn golden brown. Remove from heat and keep aside.
  • Beat egg and milk. Add flour and beat well
  • Grease a pie pan with butter. Spread the sauteed apples.
  • Pour the batter over the apples.
  • Bake for 10-12 minutes
  • Cut into wedges and serve warm with maple syrup.

Curry leaves and Seasame Rice

What is needed to make this delicious rice ?

Cooked rice 2 cup
Curry leave 1/4 cup
Sesame seeds 1 tbsp
Oil 4 tbsp
Rai /4 tsp
Channa dal 1/4 tbsp
Onions 1 sliced finely

How to make it

Take oil in a pan. When hot add rai and channa dal.

When channa dal turns to light brown colour add curry leaves and onions.

Sprinkle salt and fry onions till they are pink in colour.

Add sesame seeds. Fry for 2 minutes.

Add  rice. Mix well.

This can be done with left over rice. Can be served in lunch box.

Hyderabad Vegetable Dum Biryani

I know for some it is boring to eat veg biryani. But once a while pure non-vegetarian should eat some veggies. My husband doesn't like veg biryani. When he is working on sunday's/saturday's i make veg rice/pulao/biryani. This is not as famous as Hyderabad Chicken/Mutton dum biryani among non-vegetarians but famous with people who don't non-veg.

Ingredients:

Ingredients for marination

Veggies- Carrot
             Potato
             Beans
             Peas
             Cauliflower
Curd 1 cup
Ginger and garlic paste 2 tbsp
Salt to taste
Red chilly powder 1 tsp
Shahi zeera 1/4 tsp
Clove 2
Cinnamon 1/4 inch stick
Marathi Mooga 1
Star anise 1
Chopped Mint leaves  1/3rd cup
Chopper coriander leaves 1/3rd cup
Fried Onion 1/2 cup
Oil 2 tbsp
Green chilies 2

Marinate for 1 hour.

Basmati Rice 2 cups
Shahi zeera 1 tsp
Clove 2
Cinnamon /4 inch stick
Green chillies 2
Coriander and mint leaves few

Soak rice with the above masala for 1 hour.

For layering

Fried onions 1/4 cup
Saffron soaked in milk
Dagad Phool little
Biryani leaf 1
Lemon juice 2 tbsp
Coriander and mint leaves chopped few

Method:-

Take a pan. Add 4 tbsp oil. Add the marinate veggies. Cover and cook until gravy forms.

Cook rice until it is 3/4 done. Drain the water from the rice.

On the veggies sprinkle lemon juice,dagad phool and bay leaves.

Spread rice on the veggies.

Sprinkle saffron water.

Spread fried onions,coriander leaves and mint leaves.

Cover the bowl with foil and cook on dum for 1/2 hr on low flame.

I always place a pan under the bowl so that the flame doesn't reach the bowl directly and the biryani is cooked on low flame without vapors escaping.

Enjoy biryani with raita and mirchi ka salan.

Kadai Prawns

 This is my try to replace paneer in Kadai Paneer with add Prawns. Can find Kadai paneer receipe is here


Prawns 1 pound
Capcisum 2 cut into strips
Onion 1
Tomatoes 1
Coriender seeds 3tbsp (coarsely grounded)
Whole red chillies 4 (coarsely grounded)
Ginger 3 tbsp chopped
Garlic 11/2 tbsp chopped
Green chillies 2 chopped
Oil 6 tbsp
Ginger 2 tbsp cut into juliennes


 Method:-

 Heat a pan with 2 tbsp oil and stir fry capsicum and onions for a 2 minutes and keep aside.Add balance oil to the same pan and heat.Add chopped ginger,garlic and green chillies.Saute for a minute.
Add tomatoes and cook till oil separates.
Add salt,kasuri menthi,fried capsicum,onions and prawns .Sprinkle little water and mix thoroughly ensuring that prawns  doesn't get mashed up.Cook for 5-7 minutes.
Add ginger juliennes, cook for another 2 minutes.

PS:-Prawns doesn't take much time to cook.

Andhra Chicken Pulao



Ingredients:-

Chicken 1kg
Rice 1/2 kg
Ginger and garlic paste 2 tbsp

Marination
Chicken
Curd 1 cup
Curry leaves
Red chilly powder
Salt

Masala paste
1/4 cup grated fresh coconut
Khas khas 2 tbsp
Chaka
Lavanga
Elachi

Dry roast masala and make a fine paste

Soak rice for 1 hr

Take a thick bottom pan

Add oil.  Sauté onions until light brown in colour.

Add shahi zeera,elachi,Chaka and lavanga. Add ginger garlic paste.

Add coriander powder and masala paste. Sauté until oil oozes out. Add green chillies, curry leaves and salt.

Add chicken. Mix thoroughly and close the lid.  Now add rice on the top of the chicken. Cover it and let it cook for 5 minutes.

Now add mint and coriander leaves. Mix rice and chicken. Add water. For 1 glass of rice add 1 glass of water.cover and cook in slow flame for 15-20....

Serve hot with salan and raita.

Grilled Banana Boats




Of all the fruits i love Banana. I can eat Banana anytime of the day. I take it as my evening snack or as my morning breakfast. The other day i saw this recipe in the Walmart magazine and prepared it. I just loved the combination of chocolate and banana. Here goes the recipe:-

 Ingredients:-
 Banana 2 nos
Chocolate chips 3 tbsp
Pecans 3 tbsp
Marshmallows 1/4 cup
Foil

 Method:-

 Remove skin from banana.

 Slit the banana lengthwise.

 Stuff chocolate chips, Pecans and marshmallows. Wrap them in the foil and grill it for 8-10 minutes.

 Open the foil and eat warm. Isn't it simple and quick. :)

Chicken Tikka

 My blog has many non-veg dish, we family are meat lovers. Trying hard to reduce eating meat. We have considerably reduce eating mutton/lamb. It's mostly chicken we eat that too twice a week, Saturday and Sunday. Daughter asked me make this tikka. We used to eat very tasty Chicken tikka at a restaurant in Dubai. I used my own masala for marination and grilled it. Here is the recipe.

Ingredients:-

Boneless chicken pieces 10
Food colour few drops
Thick curd 1 /2 cup
Salt to taste
Oil 3 tbps
Garlic paste 2 tbps
Garam masala powder 1/2 tsp
Red chilly powder 1/4 tsp
Coriander powder 1/2 tsp
Onions big square pcs

Method:-

Mix curd with other ingredients. Add chicken pieces. Let the marinate rest for 4-5 hours.

Soak the barbecue sticks in water  for 1 hour.

String the chicken pieces and onion pieces alternatively.

On a baking tray spray oil.

Place the tikkas with enough space between each stick.

Grill for 15 minutes on both the sides.

Serve hot with salad.
